Job Summary
This 52-week position reports to the Senior Associate Director of Holy Cross Dining. The Assistant Director of Culinary Development and Nutrition will be responsible for menu planning, creating new recipes, monitors culinary standards and dining innovation campus wide. This position will also provide nutritional information, guidance and support to Holy Cross Dining for the benefit of students, parents, guests, faculty and administration. Monitors the processes and procedures required to produce allergy safe foods, including staff training and recipe analysis. Coordinates the Food Allergy and Special Diet Program with other key personnel. Meets, consults and guides students with special dietary concerns and is available to their parents. Facilitates Holy Cross Dining student wellness programs. Promotes Holy Cross Dining’s vital role in supporting the health and success of students. Participates in classroom, athletic team and individual nutrition counseling, if needed.

Major Areas of Responsibility

Develop cycle menus for residential dining in collaboration with the Executive Chef (‘s).
Create menus for retail locations and catering as needed.
Work closely with the Director and Associate Directors on future innovations.
Finds opportunities for “pop up” events and special promotions to increase satisfaction and driving revenue growth.
Embrace menus of change with the Culinary Institute of America.
Increase sustainability within menus whenever possible.
Collaborate with the Assistant Director of Marketing and Communications.
Meet with students and parents concerning food allergies and special diet concerns.
Communicate with Accessibility Services on food allergy/special diet and assess appropriate accommodations.
Guide and train Dining staff & student employees regarding food allergies and Food Allergy & Special Diet Program.
Ensure new/current food labels get loaded into FoodPro.
Oversee the data entry and nutritional analysis of all recipes.
Assure that accurate nutritional information is provided to customers.
Provide on-going systems training to all managers and staff to ensure the FoodPro nutritional contents of all recipes and ingredients are correct.
Conduct annual training for all Dining staff and student workers.
Create, plan and implement student wellness activities, bring a wellness aspect to special events when appropriate.
Seek opportunities to advance health promotion via the work of Holy Cross Dining both on and off campus.
Build consensus with students, faculty & staff supporting culture change towards more healthful food choices and greater nutrition literacy.
Report systemic issues related to food allergy safety to the Senior Associate Director.
Maintain continuing education in the field of nutrition, food allergies, special dietary needs and how these impact college food services.
Listens and solicits feedback from students/community to keep menus fresh and on point.
Supports students with allergies and any special dietary needs.
Loads nutritional information into foodpro.
Monitors food costs/CPM and keeps within the budget.
This position traditionally works Monday-Friday unless it’s a busy weekend or something is happening that requires this role to be on-site.
Position will need to take additional nutritional and allergen courses.
Walks around during meal services to check the accuracy of nutritional information.
Other duties as assigned.

Job Requirements:
Qualifications:

Five to ten years of food service experience is a must. Competency in recipe and nutritional data implementation into FoodPro or like systems. Qualifications must include exceptional interpersonal skills for working with students and parents. Professional experience and training on educating large groups for certifications and education on wellness and allergy awareness. Proficient in the preparation of Food Allergy Safe meals and certified in Food Safety, Allergen Training and TIPS. Experience with high volume residential dining of 3000 meals/day and catered events up to 2500.
Must be willing to participate in additional training.
Culinary background preferred.
